Der Nachtmarkt von Dalat erstreckt sich über die Stufen vor der zentralen Markthalle und entlang der umliegenden Straßen. Da es nachts in der Stadt recht kühl wird, ist das Essen hier dampfend heiß, über Holzkohle gegrillt und wird im Stehen verzehrt, während man die Hände um einen wärmenden Becher schlingt. Es ist die dichteste Ansammlung von Streetfood zum Schlendern in ganz Vietnam.
Das Gericht, nach dem alle suchen, ist Bánh tráng nướng – im Internet beharrlich als „Dalat-Pizza“ bezeichnet: ein Reispapierblatt auf dem Holzkohlegrill, bestrichen mit Ei, bestreut mit getrockneten Garnelen, Frühlingszwiebeln, getrocknetem Fleisch (Chà bông) und Chilisauce, das anschließend zusammengefaltet und in Stücke geschnitten wird. Es kostet weniger als einen Dollar, ist in zwei Minuten zubereitet und schmeckt hier besser als irgendwo sonst.
Wir probieren auch Bánh căn, die in Tonformen in der Nhà-Chung-Gasse gebacken werden, Schnecken – mit Zitronengras und Kokosmilch zubereitet –, gegrillten Mais und Süßkartoffeln frisch aus der Glut sowie heiße Sojamilch aus dem Kessel, die die ganze Stadt an einem kühlen Abend trinkt.
Zum Abschluss gibt es eine Schale mit Spießen (Xiên bẩn), die in Brühe gegart und direkt aus dem Topf ausgewählt werden, sowie eine Schale warmes Chè.

We meet at the market steps on Nguyen Thi Minh Khai where the night market sets up. Your guide will have a small sign with your name. Bring a warm layer.
Detailed itinerary
Stop 1 - Market steps at dusk: The night market as it sets up, with your guide on the city, the French hill station and why the food here is unlike the lowlands.
Stop 2 - Banh trang nuong: Rice paper on a charcoal grill with egg, dried shrimp, spring onion, pork floss and chilli, folded and cut. Made in two minutes in front of you.
Stop 3 - Banh can, Nha Chung alley: Small rice pancakes in clay moulds over coals, with quail egg and a fish sauce dip, from an alley the night market crowd walks past.
Stop 4 - Grilled corn and sweet potato: Pulled off the coals and eaten with your hands, which is the correct thing to be doing at fifteen degrees.
Stop 5 - Oc: Snails cooked with lemongrass, chilli and coconut, at a snail house off the market.
Stop 6 - Xien ban: Skewers of fish cake, quail egg, tofu and vegetables boiled in a communal broth and picked out with tongs, paid for by the stick.
Stop 7 - Sua dau nanh nong and che: Hot soy milk poured from a kettle, and a warm sweet soup, with your guide's notes on Da Lat.
