Tour description

Detailed itinerary
Stop 1 - Mercado Lucas de Galvez: The central market at its best hour, with your guide on achiote, sour orange, epazote and the Maya ingredients behind Yucatecan cooking.
Stop 2 - Cochinita pibil: Pork marinated in achiote and sour orange, wrapped in banana leaf and cooked in a pit overnight, served in a torta or on tortillas with pickled red onion.
Stop 3 - Habanero, carefully: The pickled habanero and xnipec salsas, approached slowly and with a glass of horchata standing by.
Stop 4 - Panuchos and salbutes: Fried tortillas, one stuffed with black bean and one not, topped with turkey, avocado, pickled onion and tomato.
Stop 5 - Papadzules: Tortillas filled with hard-boiled egg under a sauce of ground pumpkin seed with tomato and epazote. A pre-Hispanic dish still cooked exactly the same way.
Stop 6 - Sopa de lima: Turkey broth with the local sour lime and crisp tortilla strips, at a Centro restaurant that does the classics properly.
Stop 7 - Sorbete since 1907: Mamey, guanabana or coconut sorbet from a shop on Paseo de Montejo that has been making it for over a century.

Weitere Hinweise
Runs daily at 08:00. The early start is not optional: cochinita is a breakfast food in Yucatan and vendors genuinely sell out by early afternoon.
Heat: between March and September Merida regularly reaches 35 to 40 degrees with high humidity. We finish before noon for that reason, and we build in shade and an air-conditioned stop.
Safety: Yucatan is the safest state in Mexico and Merida is one of the safest cities in the Americas. You can walk here in a way you cannot in most of the country, and we say so because it is true.
Water: tap water is not drinkable, but Merida's established restaurants use purified ice reliably. We provide bottled water.
Cash: market and cart vendors are cash only; Centro restaurants take cards.
Hanal Pixan, the Yucatec Day of the Dead in late October and early November, changes market hours and is worth planning around - ask us.
Dietary needs: tell us at least 48 hours ahead. Papadzules, panuchos with beans and the market's vegetable dishes make a vegetarian route straightforward.
About 2 km of walking on flat colonial streets.
