Die Hotels in Nha Trang servieren ein Frühstücksbuffet für Gäste, die anschließend am Strand sitzen. Zwei Straßen weiter stadteinwärts essen die Einheimischen Bún Cá – und dieses Gericht ist weitaus besser.
Hier gibt es Bún Cá – eine klare Brühe aus Fischknochen, dazu von Hand zerdrückte und gedämpfte Makrelen-Fischfrikadellen, dünne Reisnudeln, saisonale Quallen sowie einen Teller mit fein geschnittenen Bananenblüten und Kräutern. Der entscheidende Bestandteil ist die Fischfrikadelle: Sie wird jeden Morgen frisch aus den Fischen zubereitet, die die Boote an Land bringen. Ein Lokal, das fertige Fischfrikadellen kauft, anstatt sie selbst herzustellen, ist den Besuch nicht wert. Ihr Guide zeigt Ihnen, woran Sie den Unterschied erkennen.
Wir beginnen am Xóm-Mới-Markt, dem lokalen Markt der Stadt und keinem Touristenmarkt, um Bún Cá zu essen und die Fisch- und Obststände anzusehen. Anschließend probieren wir Bánh Canh Chả Cá, eine Variante mit dickeren Nudeln aus Tapiokamehl, sowie Bánh Căn – kleine Reisküchlein, die in Tonformen über Holzkohle gebacken und mit Wachteleiern, Frühlingszwiebelöl und einer Dip-Sauce aus Fischsauce serviert werden, eine Spezialität der Provinz Khánh Hòa.
Wir beenden die Tour am Đầm-Markt mit getrockneten Meeresfrüchten, Chè und Kaffee.

We meet at the Ngo Gia Tu entrance to Xom Moi Market. Your guide will have a small sign with your name. About 10 minutes' walk from the beachfront hotels.
Detailed itinerary
Stop 1 - Xom Moi Market: The city's working market, with your guide on the boats, the fish counters and the fruit, before nine when it is at its best.
Stop 2 - Bun ca: Clear fish-bone broth with hand-pounded steamed mackerel cake, thin rice noodles, banana flower and herbs. Your guide shows you how to tell a shop that makes its own cake.
Stop 3 - Banh canh cha ca: The thicker tapioca-noodle version of the same idea, with fried and steamed fish cake and a fiercer chilli.
Stop 4 - Banh can: Small rice pancakes cooked in a clay mould over coals, with quail egg, spring onion oil and a dipping sauce. A Khanh Hoa dish you will not find north of here.
Stop 5 - Banh mi Nha Trang: The local sandwich, lighter on pate and heavier on fish cake than the northern version.
Stop 6 - Dam Market: The old market, with dried seafood, squid, bird's nest and the sweet stalls, and your guide on what is worth buying.
Stop 7 - Che and ca phe sua da: A sweet soup and iced coffee to finish, with your guide's map of where to eat in the evening.
