Tour description
Balinese food is not Indonesian food. It is built on base gede, a spice paste of turmeric, galangal, kencur, candlenut, shrimp paste and a dozen other things, ground fresh every morning, and it is intensely tied to Hindu ritual - most of the island's best cooking is made for temple ceremonies and sold from a warung at lunchtime until it runs out.
We start before eight in Ubud market, when the tourist stalls have not yet set up and the locals are buying offerings, jaje cakes and bubur for breakfast. Your guide walks you through the produce and the ritual items, and explains the offerings you keep stepping over on the pavement. Then a spice-paste demonstration, so you can see and taste what base gede actually is.
The centrepiece is babi guling - suckling pig spit-roasted over coconut husk with lemongrass and turmeric, served with crackling, blood sausage, lawar and rice. The best warungs open at eleven and sell out by one, which is why this tour is timed the way it is. We also eat sate lilit, minced fish or pork mixed with coconut and spice and moulded onto lemongrass stalks.
Small group, maximum 10 guests, entirely on foot in central Ubud.

Weitere Hinweise
Runs daily at 07:00. The timing is built around the babi guling warungs, which open late morning and sell out by about 13:00. There is no evening version of this tour.
Nyepi, the Balinese day of silence, falls on Monday 9 March 2027. The whole island stops: no vehicles, no lights, no outdoor activity, the airport closes for 24 hours and mobile data is switched off. We do not run on Nyepi, and we treat the afternoon before and the morning after as reduced. The Ogoh-Ogoh parade on the evening before is spectacular and we can advise on seeing it.
Balinese temple ceremony days, including Galungan and Kuningan, close individual warungs at short notice. We hold a backup for every stop.
Halal: Balinese food is built around pork, so there is no halal path through a classic Bali food tour. For Muslim guests we build a Javanese and seafood route instead - tell us when you book.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is workable in Ubud with notice.
Cash only at the market; bring small rupiah notes. Entirely on foot, about 1.5 km.
