Tour description
Achabine, a short lane off the main medina spine, is where Fes eats in the evening. It is not on any tour itinerary, it has no sign in any European language, and from about five in the afternoon the fryers and grills along it are running flat out.
We eat fried fish - whiting and sardines, floured and dropped into oil, served in paper with cumin and lemon; brochettes of lamb, liver wrapped in caul fat, and merguez off the coals; maakouda, mashed potato cakes fried until the outside cracks; and babbouche, snails simmered in a broth of aniseed, thyme and liquorice root, which people here drink as a remedy for everything.
Between stops your guide explains what makes Fassi cooking the most refined in Morocco - the court traditions, the Andalusian inheritance after the fall of Granada, and the Jewish quarter that shaped its preserving - and points out the things you would walk past.
We finish with harira and a plate of pastries, and a walk back up through lanes that are quieter and easier at night than by day.
Small group, maximum 10 guests, with a licensed guide.

Other notes
Runs daily at 18:00.
Our guides are licensed and stay with the group throughout. The medina at night is safe and quieter than by day, but it is a maze and you should not attempt it alone on your first evening.
Ramadan: during Ramadan the medina's evening trade runs until one or two in the morning and this is the best time of year to do this walk. We adjust the timing - ask us if your dates fall inside it.
Alcohol is essentially unavailable in the Fes medina and this route does not include it.
Water and hygiene: bottled water only; everything on this route is fried or grilled to order.
Dietary needs: tell us at least 48 hours ahead. This route is meat and fish heavy; a vegetarian version is possible via maakouda, briouat, harira and salads with notice.
Minimum age 10. About 2 km of walking on uneven medieval paving, with some steps. Not suitable for wheelchairs.
