Tour description

Fes el-Bali is the largest car-free urban area on earth, a maze of roughly nine thousand lanes that has been continuously inhabited since the ninth century. Its food is the most refined in Morocco - this was the imperial capital, and the court cooking stayed - and almost none of it is written down.

We walk downhill from the Blue Gate in the morning, which is when the medina's street food happens. Msemen, flaky square flatbread folded and fried on a griddle, eaten with honey or with amlou, the argan and almond paste. Bissara, broad bean soup poured into a bowl with olive oil, cumin and a great deal of bread. Sfenj, rings of dough fried in a vat by the Nejjarine fountain and threaded onto a palm string to carry home.

Then the savoury end: harira from a vendor who has kept the same pitch for decades, khlii preserved meat, and the camel butcher who hangs a head above the stall so nobody has to ask what it is.

We finish in the sweet souk with chebakia, sesame and honey pastries folded like flowers, and mint tea.

Small group, maximum 10 guests, with a licensed local guide.
Meeting point:

Bab Boujloud (the Blue Gate), Fes el-Bali medina

View on map

We meet outside Bab Boujloud, the Blue Gate, at the top entrance to the old medina. Your guide will have a small sign with your name.

Detailed itinerary

Stop 1 - Bab Boujloud: We start at the Blue Gate with your guide on Fes's ninth-century founding, the guild system and how to navigate nine thousand lanes.
Stop 2 - Msemen and mint tea: Square flatbread folded many times and fried on a griddle, eaten with honey or with amlou, the argan and almond paste.
Stop 3 - Bissara: Broad bean soup poured hot into a bowl with olive oil, cumin and chilli, eaten with bread and nothing else. The medina's working breakfast.
Stop 4 - Sfenj at the Nejjarine fountain: Rings of dough fried in a vat and threaded onto a loop of palm string. A morning-only trade.
Stop 5 - Harira and khlii: Tomato and lentil soup from a vendor with a decades-old pitch, plus khlii, meat preserved in fat and fried with eggs.
Stop 6 - The souks: Camel butcher, spice merchants and the tanneries viewpoint, with your guide on the medieval guild layout that still governs which trade sits where.
Stop 7 - Chebakia and pastries: Sesame and honey pastries folded like flowers, ghriba and briouat, from the sweet souk near the Kairaouine mosque, with mint tea.

Other notes

Runs daily at 08:30. Most cooked street food in the Fes medina finishes around one in the afternoon, which is why this is a morning tour.
Our guides are licensed. Fes is the most disorienting medina in Morocco and unlicensed guides attach themselves to visitors and then charge to lead them out. Your guide will show you how to decline firmly, and you will have an offline map.
Pricing: street food in Fes has a wide gap between local and visitor prices. Your guide agrees every price and pays.
Friday: many family-run stalls close around midday prayer and the family couscous, roughly noon to three. Our morning route finishes before that.
Ramadan: daytime food service in the medina almost stops. We switch to an evening iftar tour for those weeks - ask us if your dates fall inside it.
Alcohol is essentially unavailable in the Fes medina and this route does not include it.
Water and hygiene: bottled water only; we use cooked-to-order and high-turnover stalls and avoid anything standing.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is workable via msemen, bissara, salads and pastries.
About 2.5 km of walking, downhill, on uneven and often slippery medieval paving. Not suitable for wheelchairs or for anyone with significant mobility difficulty.
