Tour description
Marrakech's medina is one of the great food cities and one of the most stressful places on earth to eat without help. Prices are not posted, dishes arrive that you did not order, and the man steering you towards a stall is paid to do it. A guide who speaks Darija and agrees every price before you sit down changes the experience completely, which is what this tour is.
We start in the spice square with an apothecary who will explain ras el hanout, the blend that can contain thirty ingredients, and let you smell the difference between real saffron and safflower. Then bissara, the thick broad bean soup with olive oil and cumin that Marrakech eats for breakfast, and khobz from a communal neighbourhood oven where families still send their dough.
The centrepiece is Mechoui Alley: whole lambs lowered into clay pits under the ground at dawn and pulled out at midday, sold by weight with cumin and salt. We also eat tanjia, the men's dish - beef or lamb sealed in an urn with preserved lemon and cooked overnight in the ashes of the hammam furnace.
We finish with mint tea and pastries on a rooftop above the square.
Small group, maximum 10 guests.

Rahba Kedima (spice square), Marrakech medina
We meet in Rahba Kedima, the spice square, beside the apothecary stalls. Your guide will have a small sign with your name. It is a 5-minute walk north from Jemaa el-Fnaa.
Detailed itinerary
Stop 1 - Rahba Kedima, the spice square: An apothecary explains ras el hanout, argan, orange blossom and how to tell saffron from safflower, with a tasting of preserved lemon and olives.
Stop 2 - Bissara and khobz: Thick broad bean soup with olive oil, cumin and chilli, with bread from a communal neighbourhood oven where families still send their own dough to bake.
Stop 3 - Mechoui Alley: Whole lamb lowered into clay pits under the ground before dawn and pulled out at midday. Sold by weight, eaten with cumin, salt and bread, with your hands.
Stop 4 - Tanjia: Beef or lamb sealed in a clay urn with preserved lemon, garlic and saffron and cooked overnight in the ashes of the hammam furnace. Traditionally a men's dish and still cooked that way.
Stop 5 - Souk walk: A guided pass through the leather, metal and dyers' souks, with your guide on how the trades are organised and how to refuse a faux guide firmly.
Stop 6 - Sfenj and msemen: Doughnuts fried in a vat and flaky pan-fried flatbread with honey and amlou, from a stall that opens at dawn.
Stop 7 - Mint tea on a rooftop: Sweet mint tea and Moroccan pastries - kaab el ghazal, chebakia, briouat - looking over the square.

Other notes
Runs Saturday to Thursday at 10:30. We do not run on Fridays: many medina stalls, including most of Mechoui Alley, close for midday prayer and the family couscous, roughly between noon and three.
Every price on this tour is agreed by your guide before you sit down, and your guide pays. Touting and improvised billing are the medina's two worst habits and this is the main practical reason to take a guided tour here.
Our guides are licensed. Unlicensed guides are illegal in Morocco and are a persistent problem in Marrakech - your guide will show you how to decline one without a scene.
Ramadan: most medina food places close in daylight during Ramadan and the city comes alive after sunset. We switch to an evening iftar tour for those weeks, which is genuinely the best time of year to eat here. Ask us if your dates fall inside it.
Alcohol is not served on this route. It is available in licensed restaurants and riads, and your guide can point you to them.
Water and hygiene: we serve bottled water only, and we use cooked-to-order grills and high-turnover stalls.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is workable via bissara, salads, msemen and pastries.
About 2 km of walking on uneven medina paving. Not suitable for wheelchairs.
