Tour description
Mekong Delta cuisine is cooked differently from the rest of Vietnam. More sugar, more coconut, more freshwater fish, and a fermented fish paste known as mắm, which is both the soul of the region and a culinary dividing line—people either love it or don't want to go anywhere near it.
We start with bánh cống, a fried pastry made of mung beans, pork, and whole shrimp, deep-fried in a small ladle until it becomes a crispy golden cake, served with lettuce, fresh herbs, and dipping sauce. This is a Can Tho specialty, and the stall we chose has been frying these cakes in the very same alley for decades.
Next is the night market on Phan Chu Trinh Street, which turns into a walking street from 6:00 PM and runs until about 11:00 PM, to enjoy grilled pork rolls (nem nướng), grilled seafood, and banh mi.
The highlight is lẩu mắm: a hotpot simmered with a fermented fish broth base, featuring river fish, shrimp, squid, pork belly, and a massive platter of Delta aquatic greens and vegetables—water lily stems, bitter herbs, and banana blossoms—all of which your guide will name for you. This is the most distinctly regional dish you can experience in Vietnam.
Small group, maximum 10 guests.

Other notes
Daily departure at 17:30. The night market is busiest between 7:00 PM and 9:00 PM.
High tides: on peak tide days from September to November, water rises through the drainage system and floods the central streets of Ninh Kieu, sometimes ankle-deep, in the early evening. We check the lunar tide calendar when planning and will reschedule your booking rather than have you wade through the water.
Mắm: fermented fish paste is the signature flavor of this region, and lẩu mắm is cooked with it as its broth base. The aroma is quite pungent. Your guide will explain it clearly before we order, and non-mắm hotpot options are available if you prefer not to try it.
Addresses: the district level was abolished in July 2025, and Can Tho City now encompasses the former Soc Trang and Hau Giang provinces. Ninh Kieu is a ward.
Dietary requirements: please notify us at least 48 hours in advance. Vegetarian options can be arranged in the Mekong Delta, which has a strong Buddhist tradition, with prior notice.
Approximately 1.5 km of walking along flat riverside streets.
