Tour description

Guadalajara gave Mexico mariachi, tequila and birria, and it is quietly one of the country's best eating cities. It also got its first Michelin stars in 2026, which has finally made the rest of the world pay attention.

We start with the torta ahogada, which is the city's own and which nobody else makes: a crusty birote roll filled with fried pork, then dunked whole in a thin tomato and chilli sauce until it is soft enough to collapse. You eat it with your hands over a plate and you will need the bib.

Then birria - goat, not beef, slow-cooked in a chilli adobo and served with a cup of its own consomme - in the Nueve Esquinas barrio where the city's birrierias cluster.

We walk through Mercado San Juan de Dios, one of the largest covered markets in Latin America, for tostadas, carnitas and tejuino, the fermented corn drink served with lime and salt that is an acquired taste and then an addiction.

Small group, maximum 8 guests, entirely on foot.
Meeting point:

Plaza de Armas, Centro Historico, Guadalajara

We meet in Plaza de Armas in the Centro Historico, beside the bandstand. Your guide will have a small sign with your name.

Detailed itinerary

Stop 1 - Plaza de Armas and the Centro: A short orientation walk past the cathedral and the Degollado theatre with your guide on Jalisco's contribution to Mexican identity.
Stop 2 - Torta ahogada: A crusty birote roll filled with fried pork and dunked whole in thin tomato and chilli sauce. Messy, specific to this city and completely worth it.
Stop 3 - Birria de chivo: Goat cooked in chilli adobo until it falls apart, with a cup of consomme, onion, coriander and lime, in the Nueve Esquinas birria quarter.
Stop 4 - Mercado San Juan de Dios: One of the largest covered markets in Latin America. Tostadas, carnitas, dried chillies and a floor of things to point at.
Stop 5 - Tejuino and bionico: Fermented corn drink with lime, salt and chilli, and a cup of fruit with cream, granola and honey. Both entirely local.
Stop 6 - Carne en su jugo: Beef in its own broth with bacon, beans and spring onion, a Guadalajara invention and a very good one.
Stop 7 - Tequila or raicilla tasting: A small tasting of agave spirits with your guide on the difference between tequila, mezcal and raicilla, and how to read a label.

Other notes

Runs daily at 09:30. This is a daytime tour by design.
Safety, stated openly: the US State Department rates the state of Jalisco at Level 3, reconsider travel. That rating covers the whole state and the restrictions on US government employees apply to southern Jalisco near the Colima and Michoacan borders, not to the Guadalajara metropolitan area. Homicides in the state fell sharply through 2026. The realistic risk to a visitor is non-violent crime - pickpocketing, bag snatching, taxi overcharging - which is rising. We run daytime only, keep the group at eight, use app-based cars rather than street taxis, and ask you not to display valuables. Please read your own government's advice and make your own decision.
Water: tap water is not drinkable. Tejuino is fermented and bionico contains fresh dairy, so we use high-turnover established stalls only.
Cash: market stalls are cash only. Your guide pays throughout.
Minimum age 18 if you want the tequila tasting; younger guests are served agua fresca.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is workable but Jalisco's classics are meat-centred, so tell us early.
About 2.5 km of walking on flat streets.
