Tour description
Phu Quoc is closer to Cambodia than to mainland Vietnam and it is where the country's best fish sauce is made - anchovies caught in the surrounding waters, salted on the boat, and fermented in wooden barrels for a year or more. Almost every serious Vietnamese kitchen uses it.
The island's own dish is bun quay, which exists here and effectively nowhere else. Noodles are extruded fresh into the bowl, topped with fish and squid cake, and served with a hot broth - and crucially, with an empty saucer, a bowl of salt, chilli, lime, sugar and MSG, and the expectation that you will mix your own dipping sauce. Tourists who do not know this eat it plain and report that it is bland. Your guide will show you.
We also eat bun ken, rice noodles under a coconut milk and turmeric sauce made with flaked fish, and hu tieu muc, squid noodle soup made with squid landed that morning.
Then the market and the fishing port, and a fish sauce house where your guide explains the barrels, the grades and how to read a label.
Small group, maximum 10 guests.

Other notes
Runs daily at 07:00. Bun ken and the morning noodle shops finish by mid-morning.
Bun quay is not seasoned for you. If you eat it without mixing the dipping sauce you will think it is bland, which is exactly what happens to most visitors. Your guide mixes the first one with you.
Monsoon: the southwest monsoon runs roughly May to October and brings rough seas, which cancels boat trips but does not affect this walking route.
Addresses: since July 2025 Kien Giang province no longer exists - Phu Quoc is a special administrative zone under An Giang province, and the district tier has been abolished nationally. Street numbers are unchanged.
Prices: Duong Dong's tourist strip is noticeably more expensive than the local side of town. Our route is deliberately on the local side and your guide pays local prices.
Dietary needs: tell us at least 48 hours ahead. This route is fish-centred; a vegetarian version is possible with notice but changes most stops.
About 2 km of walking on flat streets.
