Tour description

Zanzibar was the centre of the Indian Ocean spice trade and, less comfortably, of the East African slave trade, and Stone Town's coral-stone lanes still carry both histories. The food is Swahili, Omani, Persian and Indian in the same mouthful.

We start at Darajani Market in the morning: the fish auction shouting itself out by nine, the spice aisle where cloves, cardamom, nutmeg and cinnamon are sold loose, and the fruit stalls with things you will not recognise. Your guide explains how the clove plantations worked and what they cost.

Then the lanes: urojo, the sour turmeric soup with fritters, potato and a scoop of chutney that Zanzibar calls Zanzibar mix; pilau cooked with cinnamon and cloves; mishkaki skewers; and mandazi with spiced tea.

The evening departure passes through the Forodhani Gardens night market, and we will be honest about it: it is atmospheric and it has a poor food-safety reputation. We treat it as a place to look, buy only what is grilled in front of us, and eat properly at a local kitchen instead.

Small group, maximum 8 guests, entirely on foot.
Meeting point:

Darajani Market main entrance, Creek Road, Stone Town

Detailed itinerary

Stop 1 - Darajani Market: The fish auction, the spice aisle and the fruit stalls, with your guide on cloves, the plantation economy and how Zanzibar became the spice island.
Stop 2 - Spice tasting: Cloves, cardamom, nutmeg with its mace, cinnamon bark and black pepper, smelled and tasted side by side.
Stop 3 - Urojo, the Zanzibar mix: A sour turmeric and mango soup poured over fritters, potato, crisps and coconut chutney. Nothing else in Africa tastes like it.
Stop 4 - Pilau and biryani: Rice cooked with cinnamon, clove and cumin, at a local kitchen where Stone Town actually eats rather than a seafront restaurant.
Stop 5 - Stone Town lanes: A guided walk past carved doors, Omani houses and the old dispensary, with your guide on the town's layered and difficult history.
Stop 6 - Mishkaki and Zanzibar pizza: Grilled skewers and the folded, stuffed, griddled pancake that the island calls a pizza, cooked in front of you.
Stop 7 - Sugar cane juice and mandazi: Cane pressed with lime and ginger, and coconut doughnuts with spiced tea.

Other notes

Runs daily, with a morning departure at 09:00 and an evening one at 16:30. The morning tour catches the fish auction; the evening one catches the night market.
On Forodhani Gardens, honestly: the seafront night market is the island's most photographed food attraction and it has a long-standing reputation for seafood that was cooked early and left sitting, with visitors regularly reporting illness afterwards. We walk through it because it is genuinely a sight, we will buy something grilled to order in front of the group if you want it, and we put the real eating at a vetted local kitchen. We would rather tell you this than let you find out.
Dress: Zanzibar is overwhelmingly Muslim and modest dress in Stone Town is expected and enforced. Cover shoulders and knees.
Ramadan: daytime kitchens largely close and Forodhani is dead until sunset, then surges. We run evening-only that month.
Water and hygiene: bottled water only, and ice is the main risk on this island - we avoid it.
Cash: Tanzanian shillings and US dollars are both accepted; ATMs are unreliable, so your guide carries the float.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is straightforward via urojo, pilau, mandazi and coconut-based dishes.
About 1.5 km of walking through narrow coral-stone lanes.
