Descripción del tour

Sham Shui Po is the poorest district in Hong Kong and the best place in the city to eat. It has no harbour view and no rooftop bars. What it has is three and four generation family shops packed into a flat grid of streets, selling one thing each, at prices that have not caught up with the rest of the city.

We start at a tofu shop that has been in business since the 1890s, for warm tofu-flower pudding with ginger syrup and deep-fried tofu with chilli sauce. Then cheung fun, silky steamed rice rolls cut with scissors and doused in sesame paste, sweet sauce and soy. Then the centrepiece: wonton noodle made the traditional way, where the dough is kneaded by a man bouncing on a bamboo pole, giving a springiness no machine reproduces - there are only a handful of shops left doing it.

We also stop for a cha chaan teng milk tea, strained through a cloth sock until it is the colour of caramel, and a pineapple bun with a slab of cold butter. Your guide explains the refugee history that produced this food, why the dai pai dong are disappearing, and what a cha chaan teng actually is.

Small group, maximum 8 guests, entirely on foot.
Meeting point:

Itinerario detallado

Stop 1 - Tofu shop since the 1890s: Warm tofu-flower pudding with ginger syrup, and deep-fried tofu with sweet chilli sauce, from a family in its fourth generation.
Stop 2 - Cheung fun: Silky steamed rice rolls cut with scissors into a bowl and covered in sesame paste, sweet hoisin and soy - a Hong Kong breakfast standard.
Stop 3 - Bamboo-pole wonton noodle: Egg noodles kneaded by a man riding a bamboo pole, served with prawn wontons in a dried-flounder broth. Only a handful of shops still do this.
Stop 4 - Street market walk: A guided pass through the fabric, bead and hardware lanes, with your guide on Sham Shui Po's refugee and manufacturing history.
Stop 5 - Cha chaan teng: Milk tea strained repeatedly through a cloth sock, with a pineapple bun and a thick slab of cold butter. Your guide explains what a cha chaan teng is and how to order in one.
Stop 6 - Egg waffle: Gai daan jai cooked in a hinged iron and peeled off in a sheet of crisp bubbles, eaten hot on the street.
Stop 7 - Herbal tea or tong sui: A bowl of sweet soup or a cup of bitter herbal tea, with your guide's notes on Hong Kong's disappearing food trades.

Otras notas

Runs daily at 10:00.
Hong Kong's old food trades are closing fast. Licensed dai pai dong are down to fewer than twenty in the whole territory, licences cannot be transferred except to a spouse, and long-running cha chaan teng close every year. Your guide confirms the route the day before and always carries two substitutes per stop.
Typhoon and rainstorm warnings: when Signal 8 or Black Rain is hoisted, the city stops. We cancel and refund in full.
Most older shops are cash-preferred and have no English menu, which is much of what a guide is for here. Tables are communal and turnover is about fifteen minutes.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is workable via tofu, cheung fun and tong sui, with notice.
Entirely on foot, about 2 km on flat streets.
