Ninh Hoa is a town an hour north of Nha Trang and it gave the region its most exported dish: nem nuong, seasoned minced pork grilled on skewers and rolled at the table with rice paper, a crisp fried spring roll baton, lettuce, green banana, cucumber and herbs, dipped into a thick pork-and-peanut sauce. Assembling one properly takes practice and your guide will roll the first few.
That is where this tour starts. Then banh can, the clay-mould rice pancakes, from the To Hien Thanh carts that only fire up in the afternoon, and bo nuong la lot - beef wrapped in betel leaf and grilled - from the corner stands that have been on the same junction for years.
The centrepiece is bo nuong, table-grilled beef at a restaurant that has been doing it since the 1970s, where the meat arrives marinated and you cook it yourself over coals with a plate of rice paper and herbs.
We finish with oc - sea snails, clams and scallops with lemongrass, chilli, tamarind and coconut - at a snail house, which is where Vietnamese people actually go for an evening out.

We meet at the corner of Bach Dang and Mac Dinh Chi, where the grill carts set up. Your guide will have a small sign with your name.
Itinerario detallado
Stop 1 - Bo nuong la lot: Minced beef wrapped in betel leaf and grilled over coals, plus banh trang nuong, from the corner carts on Bach Dang.
Stop 2 - Nem nuong Ninh Hoa: Seasoned pork grilled on skewers and rolled at the table with rice paper, a fried spring roll baton, green banana, cucumber and herbs, into a thick peanut and pork sauce.
Stop 3 - Banh can: Small rice pancakes cooked in a clay mould over coals with quail egg and spring onion oil, from the afternoon carts.
Stop 4 - Bo nuong at the table: Marinated beef grilled by you over coals at a restaurant that has been doing this since the 1970s, with rice paper and herbs.
Stop 5 - Oc: Sea snails, clams and scallops cooked with lemongrass, chilli, tamarind or coconut, at a snail house with a cold beer.
