Descrizione del tour
Il mercato notturno di Đà Lạt si estende lungo le gradinate davanti al mercato centrale e lungo le strade circostanti e, poiché la città di notte è piuttosto fredda, il cibo qui è sempre fumante, cotto sulla brace e consumato in piedi, stringendo tra le mani un bicchiere di qualcosa di caldo. È la più densa concentrazione gastronomica pedonale di tutto il Vietnam.
Il piatto che tutti cercano è il bánh tráng nướng, che su internet si ostinano a chiamare "pizza di Đà Lạt": una cialda di carta di riso adagiata sulla brace, spennellata con uovo e cosparsa di gamberetti essiccati, cipollotto, sfilacci di maiale e salsa al peperoncino, poi piegata e tagliata a pezzi. Costa meno di un dollaro, si prepara in due minuti e la versione cucinata qui è più buona che in qualsiasi altro posto.
Mangeremo anche i bánh căn cotti negli stampi di terracotta nel vicolo di Nhà Chung, lumache cotte con citronella e cocco, pannocchie e patate dolci appena tolte dalla brace, insieme al latte di soia caldo versato direttamente dal bollitore, la bevanda che tutta la città sorseggia nelle notti fredde.
Concluderemo con una ciotola di "xiên bẩn" (spiedini cotti nel brodo e scelti direttamente dalla pentola) e una ciotolina di chè caldo.

We meet at the market steps on Nguyen Thi Minh Khai where the night market sets up. Your guide will have a small sign with your name. Bring a warm layer.
Itinerario dettagliato
Stop 1 - Market steps at dusk: The night market as it sets up, with your guide on the city, the French hill station and why the food here is unlike the lowlands.
Stop 2 - Banh trang nuong: Rice paper on a charcoal grill with egg, dried shrimp, spring onion, pork floss and chilli, folded and cut. Made in two minutes in front of you.
Stop 3 - Banh can, Nha Chung alley: Small rice pancakes in clay moulds over coals, with quail egg and a fish sauce dip, from an alley the night market crowd walks past.
Stop 4 - Grilled corn and sweet potato: Pulled off the coals and eaten with your hands, which is the correct thing to be doing at fifteen degrees.
Stop 5 - Oc: Snails cooked with lemongrass, chilli and coconut, at a snail house off the market.
Stop 6 - Xien ban: Skewers of fish cake, quail egg, tofu and vegetables boiled in a communal broth and picked out with tongs, paid for by the stick.
Stop 7 - Sua dau nanh nong and che: Hot soy milk poured from a kettle, and a warm sweet soup, with your guide's notes on Da Lat.

Runs daily at 18:00. We start at six rather than earlier because in the May to October wet season the heavy rain usually falls in the late afternoon and clears by evening.

The night market is genuinely crowded at weekends, particularly on Saturday. Weeknights are more comfortable and we recommend them.
