Huế un tempo era la capitale degli imperatori della dinastia Nguyễn, e la cucina locale conserva ancora uno stile di corte: tante piccole portate anziché un unico grande piatto, presentate con cura e più piccanti che in qualsiasi altra parte del Vietnam. Gli abitanti del posto vi racconteranno che la cucina reale doveva preparare cinquanta piatti al giorno per una sola persona, e quell'abitudine non è mai scomparsa.
Iniziamo al mercato di Đông Ba, il mercato centrale della città sul Fiume dei Profumi, quando questo posto è ancora un vero e proprio mercato e non un set fotografico. La guida vi condurrà tra paste di gamberetti, peperoncini, pesce fermentato e cialde di riso, fino alla vostra prima ciotola di bún bò Huế: la zuppa di spaghetti di riso con carne di manzo e maiale, citronella e pasta di gamberetti nata proprio in questa città, di cui tutte le altre versioni al mondo sono solo copie.
Poi attraverseremo il ponte verso Cồn Hến, un piccolo isolotto sul fiume dove è nato il cơm hến: riso freddo con piccole vongole di fiume, brodo di vongole, ciccioli croccanti di maiale, arachidi, erbe aromatiche e un cucchiaio di pasta di gamberetti, mescolati direttamente al tavolo. Costa meno di un dollaro ed è uno dei piatti più deliziosi del Vietnam.
Concludiamo con una selezione di bánh – bèo, nậm, lọc, ram ít – cinque piccole preparazioni a base di riso cotte al vapore e avvolte in foglie, da gustare secondo un ordine preciso.

Dong Ba Market, Tran Hung Dao Street, Hue
We meet at the Tran Hung Dao entrance to Dong Ba Market, on the river side. Your guide will have a small sign with your name.
Itinerario dettagliato
Stop 1 - Dong Ba Market: The city's central market on the river, with your guide on shrimp paste grades, Hue chilli, fermented fish and why this region's food is the spiciest in the country.
Stop 2 - Bun bo Hue: Beef and pork noodle soup with lemongrass and shrimp paste, thick round noodles, congealed blood and a slab of pork knuckle. This is where the dish is from.
Stop 3 - Con Hen islet: A walk across to the small river island that supplies the clams, with your guide on how the islet families work.
Stop 4 - Com hen: Cold rice with tiny river clams, their broth poured over, pork crackling, peanuts, banana flower, herbs and shrimp paste - mixed at the table and eaten immediately.
Stop 5 - Banh beo, nam, loc: Steamed rice cakes in small dishes with dried shrimp and crackling, flat cakes wrapped in banana leaf, and translucent tapioca dumplings with a whole shrimp inside.
Stop 6 - Banh ram it: A sticky rice dumpling sitting on a crisp fried disc, with shrimp paste and nuoc cham.
Stop 7 - Che Hue and coffee: Hue's sweet soups - including the famous one with a candied pork fat centre - with a Vietnamese coffee to finish.

Free cancellation up to 24 hours before the tour start time for a full refund. Cancellations within 24 hours are non-refundable. During the September to December flood season we may reroute away from the river islet; if the city floods we cancel and refund in full.
