Descrizione del tour

El Salvador is small, it is the best coffee country in Central America, and it has one great national dish. A pupusa is a thick hand-patted corn or rice flour disc stuffed with cheese, beans, pork or loroco flower buds, cooked on a comal and served with curtido, a lightly fermented cabbage slaw, and a thin tomato salsa. You eat them with your hands. They cost about a dollar. A good one is a genuinely great piece of food.

This tour runs on Paseo El Carmen in Santa Tecla, a pedestrianised street that fills with families, musicians and food stalls in the evening, and which is the most enjoyable place in the country to eat outdoors.

We work along it: pupusas revueltas and de loroco from a woman who has patted them by hand for twenty years, yuca frita con chicharron - fried cassava with pork crackling and curtido, served on a banana leaf - riguas, sweetcorn cakes wrapped and grilled in leaves, and pastelitos, small fried empanadas.

We finish with atol de elote or chilate and a cup of Salvadoran coffee, which the country is finally keeping some of instead of exporting all of it.

Small group, maximum 8 guests.

Itinerario dettagliato

Stop 1 - Paseo El Carmen: The pedestrian street as it fills up, with your guide on Santa Tecla, the volcano above it and how this street was reclaimed.
Stop 2 - Pupusas revueltas: The classic - pork, beans and cheese inside a hand-patted corn disc, cooked on a comal, with curtido and salsa. Eaten with your hands.
Stop 3 - Pupusas de loroco and de arroz: Filled with the flower buds of a Central American vine, and made with rice flour rather than corn, which is the Olocuilta style and the one Salvadorans argue about.
Stop 4 - Yuca frita con chicharron: Fried cassava with pork crackling, curtido and salsa, served on a banana leaf.
Stop 5 - Riguas and pastelitos: Sweetcorn cakes wrapped in leaves and grilled, and small fried empanadas filled with meat and potato.
Stop 6 - Atol or chilate: A warm maize drink, either sweet with elote or the spiced ginger-and-cacao chilate, with nuegados.
Stop 7 - Salvadoran coffee: A cup from a roaster working with local farms, with your guide on why this country grows some of the best coffee in the Americas.

Altre note

Runs daily at 17:00. The street is at its liveliest from Thursday to Sunday.
Safety: El Salvador is now rated Level 1, exercise normal precautions, by the US State Department - the lowest tier, and a remarkable change from a decade ago. We think you should also know that the country has been under a state of exception since 2022, under which some constitutional protections including access to counsel are suspended, and that foreign governments have reported difficulty getting consular access to detained nationals. This does not normally touch visitors, and Santa Tecla is comfortable and well policed, but we would rather tell you than not.
Currency: the US dollar is El Salvador's official currency, so there is no exchange to worry about. Bring small bills - pupuserias are cash.
Water: tap water is not drinkable. We provide bottled water.
Rainy season runs June to November and overlaps hurricane season.
Dietary needs: tell us at least 48 hours ahead. Pupusas de queso, de frijol and de loroco are all vegetarian, so this is an easy tour to adapt.
About 1.5 km of walking on a flat pedestrian street.
