Descrição do tour
Salvador was the first capital of Brazil and the main port of the Atlantic slave trade, and its food is the most directly West African anywhere in the Americas. Dendê palm oil, dried shrimp, okra, ground peanut and cashew - the ingredients came with people who had no choice about coming, and what they built here is now the most distinctive regional cuisine in Brazil.
The centre of it is acarajé: a fritter of black-eyed pea paste deep-fried in dendê, split and filled with vatapá, a purée of bread, shrimp, coconut milk and ground nuts, plus caruru, okra with dried shrimp, and salad. It is sold by baianas in white lace who are, formally, part of a Candomblé religious tradition - the acarajé is a sacred food before it is a street food, and your guide will explain that properly rather than skipping it.
We eat at two of the famous stands in Rio Vermelho, then move to moqueca - fish or prawns stewed in coconut milk, dendê, coriander and peppers in a clay pot - and finish with cocada and a caipirinha while the square fills up.
Small group, maximum 8 guests.

Stop 4 - Mercado do Peixe: Petiscos and cold beer at the fish market bar strip, with your guide on Bahian seafood.
Stop 5 - Moqueca: Fish or prawns stewed in coconut milk, dendê, coriander, tomato and pepper in a clay pot, with rice, farofa and pirão.
Stop 6 - Cocada and dendê sweets: Coconut cooked with sugar until it sets, in white and burnt-caramel versions, from a street tray.

Outros avisos
Runs Tuesday to Sunday at 16:30. Rio Vermelho is quiet on Mondays and several acaraje stands do not trade.
Allergies, and this is important: acarajé, vatapá and caruru contain dried shrimp, peanuts and cashews, and everything is fried in dendê palm oil. If anyone in your party has a shellfish or nut allergy, tell us when you book - we can build around it but not at short notice.
Safety: travel advisories for northeastern Brazil note that muggings are common and advise taking taxis rather than walking quiet areas after dark. We include hotel transfers for exactly that reason, we stay inside the Largo da Mariquita and Largo de Santana area, and we do not walk between neighbourhoods at night. Pelourinho is for daytime.
Water: drink bottled; we provide it.
The Candomblé calendar shapes trading here. On 2 February the Iemanjá festival closes all of Rio Vermelho, and Lavagem do Bonfim in January is another major day. Carnival, in February, effectively closes the city to normal touring for about ten days. We will tell you if your dates are affected.
Dietary needs: tell us at least 48 hours ahead. A vegetarian route is possible but Bahian cooking is built on dried shrimp, so it changes several stops.
About 1.5 km of walking on flat streets, plus transfers.
