Descrição do tour
Ethiopia is where coffee comes from, and it is the only country in Africa never colonised, which is why its food owes nothing to anyone. Injera, the grey, sour, spongy flatbread made from teff, is unlike any other bread on earth, and eating off a shared platter with your right hand is the national default.
We start in the Piazza, the Italianate quarter built during the brief occupation, at a roastery that has been pulling macchiatos since 1953 and is still the best coffee in the city. Then an Italian-era pastry house, because the occupation left that behind too.
The main event is beyaynetu - a platter of injera covered with a dozen different stews, lentil, chickpea, collard greens, beetroot, spiced butter - eaten communally. Your guide explains berbere, the chilli and spice blend that defines the cuisine, and niter kibbeh, the spiced clarified butter.
We also taste kitfo, minced beef with spiced butter and mitmita chilli, which is traditionally served raw and which we take lightly cooked, and finish with a full coffee ceremony: green beans roasted in front of you, ground in a mortar, brewed in a clay jebena and poured in three rounds.
Small group, maximum 10 guests.

The fasting calendar is the single most important thing to know about eating in Ethiopia. Ethiopian Orthodox fasting is vegan - no meat, dairy or eggs - and it applies every Wednesday and Friday year-round, plus the long Lent before Easter and other periods. On those days most kitchens serve only vegan beyaynetu. That is a wonderful thing to eat and we sell it as a feature, but it means a Wednesday or Friday tour will not include kitfo. Tell us your date and we will tell you exactly what you will eat.
Kitfo is traditionally raw. We serve it leb leb, lightly cooked, by default. Raw kitfo and fresh cheese carry a genuine illness risk and we will not put them in front of a visitor who has not asked for them.
Altitude: Addis sits at about 2,350 metres. The route is deliberately short and slow; give yourself a day to acclimatise before booking.
Security: Addis itself is not under a travel restriction, but several Ethiopian regions are, and political tension persists after the June 2026 elections. We avoid gatherings and will cancel rather than run on a disrupted day. Check your own government's advice.
Water: bottled only. Cash: bring US dollars to change; ATMs are often empty and cards are rarely accepted.
About 2 km of walking at altitude, on uneven pavements.
