Description du circuit
The Mekong Delta cooks differently from the rest of Vietnam. There is more sugar, more coconut, more freshwater fish, and a fermented fish paste called mam that is the region's backbone and its dividing line - people either love it or they will not go near it.
We start with banh cong, a fritter of mung bean, pork and a whole shrimp deep-fried in a small ladle until it is a crisp disc, wrapped in lettuce and herbs and dipped in nuoc cham. It is a Can Tho dish and the shop we use has been frying them in the same alley for decades.
Then the night market on Phan Chu Trinh, which is pedestrianised from six and runs to about eleven, for nem nuong rolls, grilled seafood and banh mi.
The centrepiece is lau mam: a hotpot built on fermented fish paste, with river fish, prawn, squid, pork belly and an enormous platter of Mekong vegetables and water plants - water lily stems, bitter herbs, banana flower - that your guide will name one by one. It is the single most regional thing you can eat in Vietnam.
Small group, maximum 10 guests.

We meet at Ninh Kieu Pier on Hai Ba Trung Street, beside the Bac Ho statue. Your guide will have a small sign with your name.

Stop 1 - Ninh Kieu riverfront: We start at the pier as the lights come on, with your guide on the delta, the river trade and what makes southern cooking different.
Stop 2 - Banh cong: A mung bean, pork and whole shrimp fritter deep-fried in a ladle into a crisp disc, wrapped in lettuce and herbs. A Can Tho original.
Stop 3 - Nem nuong cuon: Grilled pork rolls wrapped with rice paper, herbs and pickled vegetables, with a thick dipping sauce.
Stop 4 - Phan Chu Trinh night market: The pedestrianised food street, with your guide walking you through the stalls and ordering the ones worth ordering.
Stop 5 - Lau mam: Fermented fish hotpot with river fish, prawn, squid and pork belly, with a platter of water lily stems, banana flower and delta herbs. Your guide names every plant on it.
Stop 6 - Grilled river fish or vit nau chao: Snakehead grilled in banana leaf, or the duck and fermented-tofu hotpot, depending on the night.
Stop 7 - Che and sinh to: A delta sweet soup with coconut milk, or a fruit smoothie, on the riverfront to finish.

Mam: fermented fish paste is the defining flavour of this region and lau mam is built on it. It is pungent. Your guide will describe it honestly before we order and there is a non-mam hotpot alternative if you decide against it.
Addresses: the district tier was abolished in July 2025 and Can Tho City now includes the former Soc Trang and Hau Giang. Ninh Kieu is a ward.
