Description du circuit

Mexico City is the best street food city in the world and the Centro Historico is where it is densest. This walk stays inside about twenty blocks built on the ruins of the Aztec capital.

We start at Mercado de San Juan, which is where the city's chefs shop: cheeses, chillies dried eight ways, edible flowers, chapulines, and a counter selling tortas that will ruin other sandwiches for you. Your guide walks you through the chilli wall, which is where understanding Mexican food actually begins.

Then tacos. Al pastor from a shop that has been carving it off the trompo since 1959, a technique Lebanese immigrants brought to Mexico in the 1930s and Mexico improved. Suadero and campechano from a stand that barely closes. Tlacoyos, the pre-Hispanic blue corn pockets stuffed with beans and cooked on a comal by a woman who has worked the same corner for years.

We finish with mole in a dining room that opened in 1912 and looks it, and churros with thick chocolate at a churreria that has been frying since 1935 and has never closed.

Small group, maximum 8 guests, entirely on foot.

We meet at the Ernesto Pugibet entrance to Mercado de San Juan. Your guide will have a small sign with your name. Metro San Juan de Letran or Salto del Agua are a short walk.

Itinéraire détaillé

Stop 1 - Mercado de San Juan: The chefs' market. Dried chillies, Mexican cheeses, edible flowers, chapulines and huitlacoche, with your guide explaining the chilli wall properly.
Stop 2 - Torta at the market counter: A pressed sandwich with milanesa or chorizo, avocado, chipotle and queso, from a counter with a permanent queue.
Stop 3 - Tlacoyos on the comal: Blue corn pockets stuffed with fava beans or requeson, cooked on a flat griddle and topped with nopal, salsa and cheese. Pre-Hispanic and still everywhere.
Stop 4 - Tacos al pastor: Pork marinated in achiote and chilli, stacked on a vertical spit, carved onto a small tortilla with pineapple, onion and coriander. At a taqueria trading since 1959.
Stop 5 - Suadero and campechano: Two more taco cuts from a Centro stand, with a guide to the salsa order and how to tell a good taqueria from a bad one.
Stop 6 - Mole: A plate of mole in a dining room that has been open since 1912, with your guide on how a sauce with thirty ingredients became the national dish.
Stop 7 - Churros and chocolate: Churros fried to order and thick chocolate or cajeta at a churreria that has been running since 1935 and never closes.

Autres remarques

Runs daily at 10:00.
Altitude: Mexico City sits at about 2,240 metres. The walk is flat but you may find you tire faster than expected. Give yourself a day before booking.
We deliberately run this tour in the Centro Historico rather than Roma or Condesa. Those neighbourhoods are at the centre of a real and ongoing argument about gentrification and foreign residents, and we do not think a food tour should add to it. Our guides are from this city, we keep groups small, and we tip at local rates.
Water and ice: tap water is not drinkable. We provide bottled water. Ice at the established venues on this route is commercially purified; we avoid it at carts.
Cash: most stalls are cash only and cannot break large notes. Your guide pays for everything.
Closures: 15 and 16 September, 2 November and 12 December bring widespread closures and street shutdowns in the Centro. We will tell you if your date is affected.
Dietary needs: tell us at least 48 hours ahead. Vegetarian is genuinely good here via tlacoyos, quesadillas with huitlacoche or flor de calabaza, and nopal.
About 2.5 km of walking on flat but crowded streets.
